Russell’s on Lake Ivanhoe has a pineapple theme because the strip of land it sits on used to be a pineapple farm. So it stands that one of the signature cocktails at the popular restaurant (voted Best New Restaurant in our Foodster Awards for Independent Restaurants) would be a Pineapple Old Fashioned. Pineapple Old Fashioned from Russell’s on Lake Ivanhoe
3 dashes Angostura Bitters
1/4 ounce Giffard Vanilla Liqueur
1/2 ounce Giffard Pineapple Liqueur
2 ounces Jack Daniel’s Rye Whiskey
Build in glass over a large ice cube; stir 15 seconds.
Garnish with a bruleed pineapple slice. (Bake sliced pineapple at 350 degrees for 10 minutes. Coat wedge with sugar and torched until crispy coating forms.)
