Compliments of the Chef: The Whiskey’s Crab Fries

The Whiskey is known for its award-winning and eminently Instagrammable burgers. But one of the more popular items people order while waiting for their burgers is the Crab Fries. In this episode of Compliments of the Chef, Hector Tolentino demonstrates how he makes it and shares the recipe.

One of the secrets, he said, is a bit of liquid smoke in the butter. That and Old Bay seasonings.

The Whiskey’s Crab Fries
One Serving

12 ounces french fry potatoes, cooked to package directions
Old Bay Seasoning
3.5 ounces lump crab meat
Crab Mayo (see recipe below)
1 tablespoon crab butter (see recipe below)
Chopped scallions for garnish
Chopped tomatoes for garnish

In a saute pan, melt one tablespoon of crab butter and saute crabmeat for one minute. In a bowl, toss cooked fries in a dash of Old Bay seasoning. Arrange fries on a plate and top with crabmeat. Drizzle crab mayo on top and garnish with chopped tomatoes and scallions.

Crab Mayo

12 ounces mayo
1.5 tablespoons lemon juice
1 ounce red onions, finely chopped
1.5 teaspoons honey
1.5 tablespoons fresh chopped parsley
1.5 tablespoons hot sauce
1.5 teaspoons Old Bay Seasoning

Whisk all ingredients together in a mixing bowl.

Crab Butter

1 pound butter, softened
1 ounce lemon juice
1 ounce hot sauce
1 ounce liquid smoke
1/2 ounce kosher salt
1/2 ounce granulated garlic
1/2 ounce fresh peeled garlic

Place all ingredients in food processor and blend well.
