Word is that a new restaurant is already planned for the space vacated by Circa (and numerous other businesses before it) in Winter Park. The name, I’m told, will be Galopin.
Galopin was a famous racing horse, which may not be the best image you want for a restaurant. However, there is also a fine dining restaurant in Quebec called Galopin. Related? I’ll look into it. In the meantime, I’m also told that Circa’s chef will be retained by the new owners. Stand by.
