As we’ve discussed recently, there are different types of pop-up restaurants that are started for a variety of reasons. One popular pop-up reason is a sort of test for a new concept. That’s what local restaurateur John Rivers has planned for Wednesday.
Rivers, of course is the River No. One in the 4Rivers Smokehouse success story. He does a terrific job with brisket and other barbecue specialties, as the lines outside his three locations will attest. But few people have learned first hand that Rivers is an accomplished and creative chef. At last year’s Jetport Food & Wine Festival, Rivers was serving food next to the likes of Daniel Boulud and Thomas Keller, and for my money, Rivers blew them away.
So Rivers has an idea for a full service restaurant, tentatively called Cowboy Kitchen. And to give it a trial, Rivers has planned a series of pop-up restaurants to float the idea. The first will be Wednesday, March 28, at the Club at Alaqua (hardly a cowboy kitchen that, but there you go). The evening will begin at 7 p.m. and feature a three-course prix fixe menu of Coffee Rubbed Cowboy Rib Eye, Bone-in Pork Milanese with Soy-Honey Glaze, and Buttermilk Fried Chicken. Cost is $75 per person.
